to make the cocktail:
•mix together 1 cup of gin, 1/2 cup of lemon juice and 1/2 cup of raspberry simple syrup*
•pour this mixture INTO 4 oz of whole milk
•let sit for at least 2 hours covered at room temp
•pour through coffee filter and again, let sit at room temp to strain through. It will take roughly 4 hours to fully strain through.
•store in fridge in a sealed bottle for up to 2 weeks.
•serve in chilled martini or coupe glass with raspberry foam**
•garnish with three raspberries
•enjoy!!!!
*raspberry simple syrup
•add 1.5 cups of raspberry to a small pot
•add 1 cup of water and 1 cup of sugar to the pot
•muddle the raspberries in the pot and mix together with sugar and water
•let simmer over low heat while stirring occasionally
•once sugar is fully dissolved and the mixture is simmering, remove from heat and let fully cool
•once cooled, strain out raspberries.
•store syrup in the fridge for up to one month.
**raspberry foam
•to an ISI Whipping Canister, add…
•2 oz raspberry simple syrup, 1 oz lemon juice, 1 oz cold water, 1/8 gram xanthan gum, 1/5 gram methyl cellulose (or 1 egg white).
•close container and shake well
•charge with one nitrogen canister
•shake well again
•let sit in the fridge for at least 30 minutes before serving
